Steve Golding, Executive Chef for Racing at Sodexho Prestige says, "Each year I look forward to The Vodafone Derby Festival as it means all the chefs can get their creative juices flowing and create a memorable signature dish, which racegoers would never have been tasted before. Last year we served Popping Candy with Scallops, which went down a treat along with Quail Eggs with Pepper Confetti!
"This year we have created an exciting range of menus, including a Bloody Mary Sorbet, consisting of a Vodka and Tomato Fondue, Tomato Tuiles and served with Celery Salt Candy Floss followed by Roast fillet of Scottish Sirloin Steak & Chips served with Garlic Chips, aged Balsamic Jelly and Pancetta Frozen Parmesan Air. To finish, a Wild Strawberry and Black Pepper Shortcake will be served with Balsamic Ice Cream and Mint Foam. We have taken ingredients that you would never think of putting together and combined them to produce dishes we know will be really enjoyed and remembered!"
David Johnson, Director of Racing at Sodexho Prestige says, "We are expecting over 100,000 visitors at Epsom Downs this year and have created new hospitality areas to accommodate the demand. This is one of the greatest and biggest days in racing and therefore customers expect more every year - we spend six months prior to the festival researching the finest food and recipe combinations so that our customers walk away not only satisfied but delighted!"
